RICETTA TIPICA DI CARNEVALE: LA CICERCHIATA MARCHIGIANA

La Cicerchiata, chiamata anche Cicerchia, è un dolce tipico della tradizione culinaria di alcune regioni del centro Italia in paticolare Marche, Abruzzo, e Molise.
La ricetta che riporto di seguito è quella caratteristica marchigiana che ancora mi suscita grandi ricordi legati al Carnevale e alla mia più tenera infanzia.
Per tutti i bambini il Carnevale è una festa indimenticabile e gioiosa, lo stesso era per me, se chiudo gli occhi ancora vedo i coriandoli, le stelle filanti, le maschere, i colori e ancora sento quell'odore di dolce, miele, e farina ... la nonna e la mamma indaffarate per casa a mescolare e friggere ... ed io che le seguivo inzuppando il ditino qua e là non vedendo l'ora di assaporare in pieno la mia dose di leccornie calde calde ... nella speranza che nessuno mi fermasse ...
Che bei ricordi !! Una Festa !! Che darei per tornare a quei tempi spensierati e dolci... purtroppo non si può tornare indietro nel tempo ... però posso sempre ricreare quell'atmosfera gioiosa e in un certo senso farla vivere anche a voi, questo è il mio dolce di oggi, la mia ricetta tipica di Carnevale.


INGREDIENTI:
  • 3 uova medie                                                                                       
  • 2 cucchiai di zucchero
  • 2 cucchiai di olio di oliva
  • scorza grattugiata di un limone
  • 2 cucchiai di liquore all'anice (mistrà)
  • 250 gr di farina 00 
  • olio per friggere 
Per condire
  • 200 gr di miele 
  • 130 gr di zucchero
  • mandorle e nocciole tritate
  • 2 cucchiai di cacao amaro (per la versione nera) 

PREPARAZIONE:
Lavorate le uova con lo zucchero e l'olio, quindi unite la scorza grattugiata del limone e poco alla volta la farina. Aggiungete sopra la farina il liquore all'anice e impastate bene fino ad ottenere un impasto morbido ma non appiccicoso.
Lasciate riposare per almeno 1 ora coprendo l'impasto. Stendete la sfoglia con un matterello, tagliatela a striscioline e da queste ricavate delle palline. Friggete in olio bollente e scolatele su carta assorbente.
A questo punto preparate il condimento: in una padella ampia fate sciogliere il miele e lo zucchero con 2 cucchiai di cacao, unite le palline fritte, la frutta secca tritata e mescolate bene il tutto. Versate la cicerchiata su un piano bagnato e con le mani date la forma che preferite.
Lasciatela riposare qualche ora prima di gustarla.

CARNIVAL TYPICAL RECIPE: "LA CICERCHIATA MARCHIGIANA"

The "Cicerchiata" , also called "Cicerchia" , is a typical dessert of the culinary tradition of some Italian centre region, in paticolar "Marche""Abruzzo" and "Molise".
The following recipe is characteristic of the region "Marche", It still evokes great personal memories of the Carnival and of my earliest childhood .For all Italian children, the Carnival is a joyful and unforgettable festivity, and the same was for me, if I close my eyes I can still seeing the confetti, the streamers , the carnival masks , all the colors, smelling the taste of sweet, honey, and flour ... my grandma and  my mom very busy blending and frying ... and me following them drenching my finger here and there, impatient to enjoy the full portion of hot delicacies ... in the hope that nobody could stop me eating...What a nice memories ! A Party ! What I'd give to go back to those carefree and sweet days ... unfortunately it's not possible going back in time ... but I can always recreate that joyous atmosphere and sharing it with you, this is my sweet of the day, my typical Carnival recipe.

INGREDIENTS:
  • 3 medium eggs
  • 2 sugar tablespoons
  • 2 olive oil tablespoons
  • grated rind of one lemon
  • 2 anise liqueur tablespoons ("Mistrà")
  • 250 grams of flour 00
  • oil for frying
For the sauce
  • 200 grams of honey
  • 130 grams of sugar
  • almonds and hazelnuts
  • 2 unsweetened cocoa tablespoons (for the black version). 

PREPARATION:
Stir  the eggs with the sugar and oil, then add the grated lemon rind and the flour little by little. Add over the flour the anise liqueur and mix well until dough is soft but not sticky.
Let stand for at least 1 hour covering the dough. Roll out the dough with a rolling pin, cut it into strips and these formed into balls. Fry them in hot oil and drain on paper towels.
At this point, prepare the sauce: in a large skillet, melt the honey and sugar with 2 cocoa tablespoons, add the fried balls, dried fruit, chopped and mix well. Pour the "Cicerchiata" on a wet floor and with your hands give it the shape that you prefer.
Let rest a few hours before serving.

  7. la mia mamma nel condimento aggiungeva bucce di arancio e limone tritate e noci! ( buonissima) che ricordi belli!
